Oh Veggie Lasagna

1 Eggplant
1 ½ tablespoons of Olive Oil
4 Cups of Fresh Spinach
½ Cup Onion – Diced
1 Cup Green Pepper – Diced
3 Cups of Mushrooms – Diced
2 Roma Tomatoes
6 Lasagna Noodles
2 Cups of Marinara Sauce
1 Cup of Mozzarella Cheese
1 Clove of Garlic – Minced
¼ teaspoon Black Pepper
¼ teaspoon Oregano
¼ teaspoon of Rosemary
¼ teaspoon Thyme
¼ teaspoon Parsley
1 ¼ tablespoon Basil
2 dried basil leaves

1. Preheat oven to 350. Spray 9×13 inch baking dish with non-stick cooking spray.
2. Add 1 Tablespoon of olive oil to pan with sliced eggplant. Sauté for 7 minutes or until tender. Turn as needed.
3. Bring water to a boil for pasta.
4. Remove eggplant from heat. Set aside.
5. Add 1 teaspoon of olive oil to pan. Add garlic, onion & green bell pepper. Cook for 5 minutes on medium heat, stirring as needed.
6. Add lasagna noodles to boiling water.
7. Combine ¼ teaspoon each of black pepper, oregano, rosemary, thyme & basil in small bowl. Set seasonings aside.
8. Add mushrooms to pan with garlic, onions & green bell peppers. Sauté for an additional 5 minutes, stirring as needed. Stir in 2 cups of spinach and seasonings. Remove pan from heat.
9. Remove pasta from heat & drain.
10. Place 3 lasagna noodles in baking dish. Add ½ cup of marinara sauce, 1 layer of eggplant, 1 layer of vegetable mixture, ½ tablespoon of basil, ½ cup of mozzarella cheese, 1 slicedRoma tomato.
11. Add an additional layer of 3 lasagna noodles, ½ cup of marinara sauce, 1 layer of eggplant, 1 layer of vegetable mixture, ½ tablespoon of basil, 2 cups of fresh spinach, 1 cup of marinara sauce, 1 sliced Roma tomato, ½ cup of mozzarella cheese.
12. Place in oven for 30-45 minutes. Remove, top with fresh basil and serve.
